Le BAM : une bonne adresse à Paris 10/05/09

J’ai mangé deux fois au « BAM », le Bar à Manger, 13 rue des Lavandières-Sainte-Opportune dans le 1e arrondissement. Chaque fois on a très bien mangé. Ils ont une cuisine inventive, mais pas farfelue. Il y a un bon foie gras, un porc confit, un tian de légumes succulent, et un sorbet à la moutarde de Dijon avec des lentilles. Bref, créatif et très savoureux. En plus, il y a un lien de famille. Un des patrons est un cousin de mon beau-père. Il y a des envies de bien manger dans les gènes. Ils ont eu 13 sur 20 et un coup de cœur dans le dernière guide Gault Millau. A essayer sans hésitation.

Association Chefadom 26/04/09

Depuis 4 ans je fais partie de l’association Chefadom (www.chefadom.com) le premier réseau de chefs cuisiniers à domicile en France. C’est un groupe de gars très sympa avec lequel j’échange des idées. On travaille ensemble pour des salons ou d’autres événements. Cette semaine nous nous retrouvons à Angoulême pour notre réunion biannuelle. Malheureusement, je ne peux pas y aller à cause du boulot. Bon travail les gars et bon appétit ! (Inutile de vous dire qu’on mange assez bien ensemble !)

La Cornue 07/06/09

Shortly after we settled in Paris, I sought out the shop of the fabled stove brand La Cornue. They have a shop in the St Germain des Près area: www.lacornue.com. Their traditional cast iron and bronze models are works of art and a chef’s dream. I would have loved to put one in my new kitchen but cost and mostly space weren’t permitting. However I am going to get to cook on a real La Cornue soon. Wednesday June 17th I’m dong a demo in the shop for their new rotisserie model “Le Flamberge”. On the menu: Roast beef with a horseradish potato salad, honey and soy marinated Duck breast with apple sauce, Tex-Mex turkey breast with dried fruit semolina, and barbeque pork ribs with a roasted pepper corn relish. I’ve been testing recipes with the rotisserie attachment in my new oven and things are looking pretty tasty!

My husband and I went to Paris for our 10th wedding anniversary. Chef Edward came to our rental apartment to prepare our anniversary dinner. The entire evening was wonderful. He was courteous and professional. He answered all of our questions and even showed us how to make his sauce.
The meal was outstanding. One of the best we had on our vacation. And his wine selection was perfect. I only wish I could find it here in the U.S. Our anniversary dinner with Chef Edward was the highlight of our trip. I thank him for making the occasion so special.

The New Kitchen 26/04/09

If you’ve had a conversation with me in the last year that lasted more than 15 minutes, the subject of our kitchen remodel probably came up. For those that haven’t heard, my wife and I have been remodelling the kitchen in our Paris apartment for the past year. Well the big news is that we’ve moved back into the kitchen. A number of little bits remain to be finished but we’re using it and it’s working out great so far. It was well worth the wait. We had our first family meal Saturday evening and our first guests today for brunch. I also cooked a huge batch of tomato sauce. My secret to good tomato sauce is lots of vegetables: I used 2 carrots, a leek, a fennel bulb, onions, garlic, celery, 8 fresh tomatoes, 3 cans of stewed tomatoes, and a bottle of red wine to boot! We’re planning to have many guests to celebrate our new kitchen so you may be getting a call soon. Feel free to call and set up a time to come by if you like. Bon appétit!

The Green Pan 23/03/09

You may have seen me for a cooking class at the Zwilling boutique, 12 boulevard de la Madeleine. Zwilling is now the exclusive distributor of the “Green Pan”, an eco friendly pot: www.grenpan.fr. We have scheduled two classes with organic menus during the “Sustainable Development” week here in Paris from the 1st to the 7th of April. Check with me if you are interested in details.
